When I first meet Rita Woidislawsky at La Colombe, her favorite coffee shop steps from Philadelphia, Pennsylvania’s upscale Rittenhouse Square, she’s effusive and bracingly direct—hugging patrons she knows, waving to baristas, and quickly finding the one table that’s about to free up.
